Spring has almost ‘sprung’, and I think the only thing I will miss about the winter season is winter squash.  Butternut squash in particular.  Almost every week during the winter I’m either roasting it along with a few other root vegetables or pureeing it into a soup.  Then I stumbled upon recipe for Butternut Squash and Caramelized Onion Galette and decided I must give it a try.

I found this recipe on Smitten Kitchen, one of my favorite food blogs, and it did not disappoint!  I think it was even better the next day.  I made a few modifications like using Gruyere cheese in addition to Fontina.  Other than that I followed the recipe as written.  The dough is a little high maintenance with several steps in the process, but considering I have the attention span of a flea right now with a toddler at home it actually worked for me.
