Frozen Banana Bites Recipe

2 bananas, sliced into 1/4″ circles
Peanut butter
1 pint fresh raspberries

1. Place banana slices on a parchment-lined baking sheet.  Place in the freezer until the bananas set (about 1 hour).

2. Remove frozen banana slices from the freezer.  Assemble the bites by spreading a bit of peanut butter on each banana slice.  Place 1 raspberry on half the slices and ‘sandwich’ with the remaining slices.

Note: The banana slices unthaw fast, so work quickly.  If the bananas become too gooey, just place the baking sheet back in the freezer to reset before continuing.

4. Place baking sheet back in freezer to set.  Once set, move the banana bites to a freezer bag and store in the freezer until eating.

Warning: These frozen banana bites are addictive!
