We had beautiful, spring weather this weekend that put me in the mood for a light, outdoor meal. I decided to make a shrimp and farro salad recipe I saw on one of my new favorite cooking shows, Extra Virgin. I love to curl up on the couch and watch cooking shows, and every now and then I actually attempt to make one of the tasty recipes!
This shrimp and farro salad is great! Whole grains, grilled shrimp, white beans, watercress – it can serve as a main course or side dish to summer grilling. I used the Extra Virgin recipe for the salad, and Ina Garten’s oven cooking method found to prepare the shrimp. It was nice to just pop the shrimp in the oven instead of standing over a hot grill or stove top babysitting the little critters. First time to try the oven method and it cooked the shrimp perfectly.
I’m adding this dish to my summer recipe repertoire for sure!
