This is probably the easiest recipe I will ever share. My mother made this spicy cheese dip when I was growing up and it was always a favorite! There are only 2 tricks to this recipe: shred the cheese yourself and serve room temperature.
Spicy Cheese Dip
12 oz Sharp Cheddar Cheese, shredded
1-4.5oz can diced green chiles
1 clove garlic
¼ tsp kosher salt (optional)
Using a food processor with a metal blade, pulse the garlic clove until minced. Add shredded cheese and green chiles. If desired, add kosher salt to taste. Pulse until fully incorporated. Serve at room temperature with sturdy tortilla chips.
Note: I love to eat this spicy cheese dip with thick, corn tortilla chips. The ones at my grocery store are gluten-free, which makes the entire recipe gluten-free. You can also serve with bagel chips, wheat thins, or mini-crustini.
