I love this time of year when my local produce vendor is over-flowing with fresh fruit! Watermelon is one of my favorites and it makes for a great Watermelon Margarita.
I am not a fan of sweet cocktails so I never drink margaritas made from a mix. This one is made with only fresh ingredients, but if you like it sweeter, you can add a bit of agave nectar diluted in equal parts water or a shot of Midori.
Watermelon Margarita Recipe
Juice of 1 lime
1 shot silver tequila
1/2 shot Cointreau (or Triple Sec)
1 cup fresh watermelon purée* (see recipe below)
Kosher salt or sugar to garnish
2 lime wedges to garnish
Using 1 lime wedge, rim margarita glass with lime juice then dip in salt (or sugar). In a cocktail shaker, add lime juice, tequila, Cointreau, and watermelon purée. Fill with ice, then shake for 30 seconds and strain into prepared glass. Garnish with a lime wedge.
For Watermelon Purée: Cube and de-seed 4 large slices of fresh watermelon meat (red parts only). Pulse in food processor until puréed.
